Feeding a small child is a serious challenge. Feeding four of them is a constant battle. To complicate matters, Faith's eating disorder requires us to be very lenient with her. That means chicken nuggets are always around, and everyone covets her nuggets. Joseph is famous for stealing them from her plate when we aren't looking.
Of course you want them to eat nutritious food, but serving it never guarantees they will eat it. So, you pick your battles and try to find foods they will eat or at least try. When I cook "real" food (which pleases Jim to no end) Lili will usually eat it, but the triplets won't. Some days I am full of ideas, other days I just need them to eat, be full and happy, and not throw half the meal on the floor. Those are macaroni and cheese/pancake days.
Then there are times when I feel like I am winning the battle. My most recent victory was Vegetable Chips. I found them in the produce area with the dried fruits. The ingredients are green beans, carrots, sweet potato, taro, canola oil and salt. Sure fresh vegetables will have more nutrients, but even Faith who hasn't eaten a vegetable since the days of Gerber puree likes them! Definitely a victory.
Another nutritional achievement was a fruit that both Faith and Joseph will eat. Dried chopped dates. Eve calls them rocks (they sort of look like rocks.) Joe calls them green muffins. I have no idea where he came up with that.
Finally, in this age of peanut fear, I must have the only toddlers who do not like peanut butter. BUT, they LOVE honey roasted peanuts.
Veggie Chips, Peanuts and Dried Dates. Sounds like lunch to me!
